Different teas require different brewing temperatures for optimal flavour and aroma extraction: delicate green teas and white teas bloom beautifully at 60–70°C without the bitterness that boiling water can cause, while oolong teas perform best at around 80°C and robust black teas and herbal infusions require the full 90–100°C for maximum strength and character. The full boil function at 100°C is also ideal for sterilising water for baby food preparation or for producing virtually germ-free, scale-free water for sensitive applications.
